
Carrot pancakes with semolina
Description
Delicious treats for the whole family. Carrot semolina fritters are great for breakfast or afternoon tea. They turn out very tasty, flip easily, and the batch is large enough for the whole family. You can easily turn them into healthier vegetable patties: add a bit more semolina and coat them in flour before frying. I don’t recommend adding sugar to the batter—the fritters may burn while frying. If your family wants something sweeter, stir icing sugar into the sour cream you serve with these wholesome little fritters. They go well with tea or coffee.

Prepare all the ingredients.

Peel the carrots, grate them on a coarse grater, and transfer to a small saucepan or sauté pan.

Add water and, over low heat, stirring occasionally, simmer for about 20 minutes. Then pour in hot milk and continue simmering for another roughly 15–20 minutes, until tender.

When the carrots are ready, without stopping stirring, add the semolina in a thin stream. Cook, stirring constantly, for another 5 minutes.

Cool the carrot mixture slightly, then add the egg and salt.

You can start frying the pancakes.

Spoon the mixture onto a hot, well-oiled frying pan using a tablespoon. Fry over medium heat on both sides until golden brown on the surface.
