
Chicken heart pancakes
Description
The dish is simple and quick to prepare. A golden-brown treat like chicken heart fritters is easy to pack for work, school, or a picnic. It cooks fast—and disappears just as fast—so for a large family, scale the ingredients up several times so everyone gets enough. Serve cooled or slightly warm.

Prepare the listed ingredients. Peel the small onion and rinse it under water.

Rinse the chicken hearts in water and trim away the membranes and blood vessels.

Put the hearts and the onion through a meat grinder into a deep bowl. Beat in a chicken egg, add salt, ground black pepper, and dried chopped herbs. If you like, you can add other spices and seasonings as well. Beat in a chicken egg and pour in water or milk of any fat content, or kefir.

Mix everything thoroughly and fold the wheat flour into the mixture.

Let the pancake batter rest for 10–12 minutes so the gluten can develop.

Heat the vegetable oil and spoon the prepared batter into it. Fry over medium heat for about 2–3 minutes on each side.
