
Bighead carp roe pancakes
Description
If you get a bighead carp with roe, be sure to make golden fritters from it so there is enough for everyone. You can serve them hot or cold, especially with various sauces, pâtés, and dips. The bake is ready. Bring to the table.

Prepare the listed ingredients. Rinse the roe and remove the membranes and blood vessels.

Pick the roe apart with your hands, removing the connecting membranes. Place it in a deep bowl. Whisk with a whisk or a regular fork, removing any leftover membranes; they wind onto the whisk as you whip. Add a chicken egg to the roe and sprinkle in salt. If you like, you can add a little fish or vegetable seasoning. Whisk.

Pour in wheat flour of the highest grade and mix it into the caviar mixture. If you don’t like that flour, substitute oat or rice flour instead.

Heat vegetable oil in a frying pan and add small portions of batter. Fry for 2 minutes on each side, turning the heat down to medium. The fritters will change colour right before your eyes. An orange-brown colour on the surface means they are done.
