
Melon pancakes
Description
The baked goods come together easily and quickly. You can make these pancakes not only with kefir but also with buttermilk or ryazhenka. If you prefer not to use fresh yeast, replace it with instant yeast—you’ll need 5 grams. Use refined vegetable oil: it won’t overpower the flavour and won’t burn when frying. Serve warm or chilled. Perfect with tea.

Prepare all the ingredients you need to make melon pancakes.

Crack an egg into a bowl, add the sugar and salt. Whisk everything with a whisk until smooth and evenly combined.

Pour kefir into a bowl.

Crumble the fresh yeast into a bowl with the eggs and kefir.

Pour in the vegetable oil.

Sift the flour through a sieve. This will make the pancakes fluffy and remove any debris and lumps from the flour, if there were any.

Mix everything until the dough is smooth and even.

Place the dough in a warm place to rise for 50–60 minutes.

Peel the melon and remove the seeds. Cut it into small cubes and add to the risen dough. Mix everything until the pieces are evenly distributed.

Pour a little vegetable oil into a frying pan, heat over medium heat, and drop the pancakes in one tablespoon at a time.

Fry the pancakes on both sides until golden brown, about 1–3 minutes per side.
