
Cauliflower pancakes
Description
Delicious baked treats for the whole family. This classic cauliflower pancake recipe can be supplemented with other vegetables (potato, carrot, zucchini) or meat mince, for example, if desired. These pancakes are perfect to take with you on a picnic or to work — a great option for a vegetable dish.

1. Wash the cauliflower under running water, removing the leaves. Separate into florets. Fill a saucepan with cold water, add a little salt, and place the florets in it. Let them soak for 30-40 minutes. Another option for preparing cauliflower pancakes is to boil the florets for a couple of minutes in boiling water.

2. Then remove the florets from the water and let them dry slightly. You can place them on a paper towel or drain them in a colander.

3. The dried cabbage needs to be chopped. The easiest way is to grate it on a grater. Do not use a blender in this case, as it will result in more of a puree.

4. Add 2 eggs to the chopped cabbage.

5. Add mayonnaise or sour cream.

6. Add a pinch of salt (you can also add a little black pepper or paprika to the cauliflower pancake recipe), baking soda, and sifted flour to make the mixture thicker and more uniform.

7. Heat vegetable oil in a frying pan and place the pancakes into it.

8. Fry the cauliflower pancakes at home until golden brown on both sides. Then place them on a paper towel and serve.
