
Zucchini Fritters with Cottage Cheese Filling
Description
The recipe won't take much time. Zucchini pancakes with cottage cheese filling are not fried in a pan with oil (as is usually done), but are baked in the oven. This will, of course, take more time, but the dish will be healthier and lower in calories. They can be served warm or chilled.

Grate the zucchini on a fine grater and salt generously. After a few minutes, drain the released liquid so the batter doesn't turn out too thin.

Add bran or flour to the grated zucchini (by eye, so the batter is not too runny for forming patties), along with egg, finely chopped garlic, pepper, and salt. Mix well.

Now let's prepare the filling. Slice the garlic into thin slices and sauté in olive oil until golden, then add it to the cottage cheese. Mix and season with spices (to taste).

Line a baking sheet with parchment paper. Using a tablespoon, shape flat cakes from half of the prepared dough. Place the cottage cheese and garlic filling in the center of each pancake. Then cover the filling with another dough flat cake and seal the edges well so the filling does not escape during baking. Transfer the pancakes to an oven preheated to 160 degrees for 30–40 minutes.

Oladyi are best served hot with tomato sauce.
