
Lentil Pancakes with Bulgur

They cook fairly quickly, can be fried with or without oil, so it's up to you whether to add extra calories. They can also be baked in the oven. They can be served with tea or coffee.

Prepare the ingredients.

Rinse the lentils, add 200 ml of water. Place on the heat. Salt to taste. Cook for 15 minutes.

The water will be almost completely absorbed. Add another 50‑100 ml of water and the bulgur. Cook for 7‑10 minutes over low heat. Turn off the heat, cover with a towel and let stand for 20‑30 minutes until all the moisture is absorbed.

Crack the eggs into a bowl, add a little salt and a pinch of spices. Stir and let stand so the herbs give their flavor.

Peel and finely chop the onion and garlic.

Sauté the onion in a small amount of olive oil. Add the garlic at the end.

Combine the lentils with bulgur, sautéed onion, and garlic.

Add the eggs with seasonings and starch. Mix everything well.

Spoon the pancakes onto the preheated skillet with a small amount of olive oil, portion by portion. Fry for 1‑2 minutes over medium heat on each side, until golden brown.
