
Pancakes for diabetics
Description
Delicious baked goods for the whole family. A recipe for healthy and tasty fritters that even simple vegetable lovers will enjoy. For people with diabetes, be sure to use coarse flour, such as rye or whole grain. This dish can be served on its own or with low-fat sour cream. In one sitting, a diabetic can eat no more than two or three of these fritters. Serve warm or chilled. Perfect with tea.

Prepare all the ingredients.

Thinly shred the cabbage.

Boil the cabbage in boiling salted water for 5 minutes, then drain it in a sieve.

Let the cabbage cool slightly, then gently squeeze out excess moisture and transfer it to a deep bowl.

Add flour, an egg, any fresh herbs, salt, and pepper to taste.

Preheat a skillet and lightly oil it. If you have a pan with a good non-stick coating, you can skip greasing it altogether. Spoon the batter onto the pan, forming small, thin pancakes. Fry over medium heat on both sides until golden brown.
