
Baked perch in salt in the oven
Description
If desired, you can place a few lemon slices inside the fish's belly, and substitute dill with other herbs. You can add spices to the salt, but make sure they don't overpower the fish's natural flavor. For an impressive presentation, you can pour rum or a strong alcoholic drink over the salt layer and set it on fire. Always observe safety precautions.

Prepare all the necessary ingredients for baking sea bass in salt in the oven.

Cut off the sharp fins from the perch, remove the gills and innards. Rinse thoroughly under cold water and dry with a paper towel. If you find roe, you can keep it and put it back into the belly cavity.

Insert peeled and halved garlic cloves and dill sprigs into the belly.

Place the salt in a bowl and add the egg white.

Add cold water and mix. The mixture should resemble fresh snow.

Line a suitable baking dish or tray with parchment paper. Place a layer of salt along the length and width of the fish. Put the perch on top of the salt strips.
