
Dried ham
Description
A delicious appetizer for any gathering. Preparing this kind of air-dried ham takes quite a long time. I didn't dare to make it myself for a very long time, but what I ended up with is worth all my effort.

Step 1

First, let's prepare the brine in which our meat will sit. To do this, pour a liter of water into a pot, add a little bay leaf, cloves, and 3 tbsp. salt.

Mix all the ingredients thoroughly. Then place the pork in a pot with the brine. Put the pot with the meat in the refrigerator for 3 days.

After 3 days, take out the meat and pat it dry with paper towels. Place it under a weight for 1–2 hours so all the moisture is pressed out.

Take spices for the meat: cloves and chopped bay leaves are perfect for this. You can also use paprika. Rub the meat with the spices (don't skimp on them).

Tightly wrap the piece of meat in cheesecloth in several layers. If you don't have cheesecloth, you can wrap it in a piece of fabric instead (cotton works well for this). Tie it loosely with any string, hang it from the ceiling in a well-ventilated room for 2 weeks. After 2 weeks, you can remove the bundle and slice the meat.
