
Hot-Smoked Chicken Legs in a Smoker
Description
A delicious appetizer for any gathering. Today for lunch we'll be smoking chicken drumsticks. Rinse them and soak in a brine of water, salt, and sugar for 2 hours. Then pat them dry with paper towels and place on the smoker racks. Smoke over alder wood chips on medium heat for 30 minutes. Let the finished smoked drumsticks cool slightly, open the lid, and enjoy this appetizing dish. Serve the appetizer at the table.

Dissolve the salt and sugar in water and place the rinsed chicken drumsticks in the brine for 2 hours.

Spread a small amount of alder wood chips on the bottom of the smoker.

Pat the drumsticks dry with paper towels and arrange them on the smoker racks. I ended up with two tiers of 4 pieces each. Set the heat to medium and close the lid.

Leave the drumsticks to smoke for 30 minutes, then let the smoker cool down a little, open the lid, and enjoy the appetizing smoked dish.
