
Cucumbers in Beer Batter
Description
Suitable for both holidays and everyday meals. This unusual crispy appetizer is surprisingly quite filling, though it takes only 10 minutes to prepare. You can serve the battered cucumbers with your favorite sauce. Serve with herbs and sauce.

1. Pour enough canola oil into a large skillet so the layer is about 2.5–5 cm thick. Or use a deep fryer if you have one. Heat the oil to 175 degrees. Slice the marinated cucumbers into pieces about 1 cm thick. Set aside.

2. In a medium bowl, whisk the eggs and beer until frothy. Season with salt and pepper and mix.

3. Add enough flour and mix until you have a dough resembling thick syrup. If the dough is too thick, add up to 1/4 cup of additional beer.

4. Using tongs, dip the cucumber slices one at a time into the batter, then place them in the heated oil in the pan.

5. Fry the cucumbers until golden, about 2 minutes, flipping after approximately 1 minute.

6. Place the finished cucumbers on a plate lined with paper towels to absorb the oil (or on a rack), and salt them.
