Cucumbers with Ketchup for Winter

Description

To make cucumbers with ketchup for winter, you need to prepare a marinade whose main ingredient is chili ketchup. But if you do not want the cucumbers to be spicy, you can use any other, milder type of ketchup. The ingredient amounts are given for two one-liter jars. Serve at the table or store in the pantry.

    Prepare all the ingredients.

    Wash the cucumbers and cover them with cold water for 2–3 hours so they stay crisp.

    If the cucumbers are small, you can pack them whole in the jars; large ones, as in my case, are better cut lengthwise into 4 pieces.

    First, sterilize the jars using any convenient method and place on the bottom cleaned garlic cloves, peppercorns, a horseradish leaf, bay leaves, and dill umbels (wash all the herbs). Pack the cucumbers tightly into the jars—the tighter they fit, the better.

    Bring the water to a boil and pour boiling water into the jars of cucumbers right up to the rim.

    Cover the jars with sterile lids and leave for 20 minutes, then drain all the water (it is no longer needed).

    Prepare the brine. Pour the required amount of water into a small saucepan. Add sugar, salt, ketchup, vinegar, and mix everything well. Bring to a boil and pour the brine over the cucumbers.

    Tighten the lids, turn the jars upside down, wrap them, and leave until cooled.
