
Japanese-style Cucumbers

Prepare all ingredients.

Wash the cucumbers, pat them dry, and trim the ends on both sides. Place a cucumber between two chopsticks and make thin cuts without cutting all the way through.

Pour water into a large bowl or food container, add salt, and stir until it has completely dissolved.

Submerge the cucumbers in water for 10–15 minutes. At this stage, you can already cut them into a couple of pieces so they fit more easily.

For the dressing, mix rice vinegar, soy sauce, sesame oil, minced garlic, sesame seeds, and hot ground chili pepper.

Transfer the cucumbers to a bag and pour the dressing over them.

Tie the bag and shake it so the dressing is evenly distributed over the cucumbers. Put it in the refrigerator for at least half an hour, or ideally for 3 hours.
