
Polish-style cucumbers for winter
Description
A simple way to stock up ahead. For this cucumber preserve, you don't need to prepare a special brine. Put the salt and sugar directly into the jars and pour in boiling water. You don't need to sterilize for too long either—7–10 minutes is enough, and the cucumbers will stay firm and crunchy. Before sealing with the lids, add the vinegar. Sterilize the jars any way that's convenient for you: over steam, in the microwave, in the oven, and so on. Store the jars of cucumbers in a cool place out of direct sunlight. Serve at the table or keep them in the pantry.

Prepare the ingredients, sterile jars, and lids.

Pour ice-cold water over the cucumbers and let them soak for 3–4 hours so they stay crisp. Rinse and trim off the blossom ends.

Arrange 5–7 rings of young carrot and 5 rings of yellow onion in each jar. Add half a horseradish leaf to each jar; it will give the cucumbers a piquant flavor and crunch.

Next, fill the jars with cucumbers. Try to pack them tightly.

Add salt and sugar to each jar.

Carefully pour boiling water so that there is room left in the jar for the vinegar, but the cucumbers must still be covered with water.

Sterilize each jar for 7-10 minutes.

Carefully remove the jars from the boiling water, and immediately pour in the vinegar.

Tighten the lids fully. Turn the jars upside down and leave them that way until they have cooled.
