Cucumbers Without Vinegar for Winter
Description
Perfect for winter stocking. I’ll go into more detail below. Jars keep for up to a year in a cool place.
Instructions
- 1
Step 1

Prepare all the ingredients.
- 2
Step 2

Thoroughly wash the cucumbers, then soak them in cool clean water for 4 hours. This will help them absorb moisture and become firmer and crunchier.
- 3
Step 3

Wash the jars with baking soda, then sterilize them in the oven or with steam. Place a horseradish leaf and a black currant leaf, dill umbels, peppercorns, and a bay leaf in the jar. Peel the garlic, cut it in half, and add it to the jar as well.
- 4
Step 4

Fill the jar tightly with cucumbers. Add a seedless lemon slice.
- 5
Step 5

Pour hot water into the jar. Fill to the very top. Cover with the lid and leave it like that for 15–20 minutes.
- 6
Step 6

Drain the liquid into a saucepan. Add sugar, salt, and citric acid. Boil for 2–3 minutes.
- 7
Step 7

Pour the hot marinade back into the jar. Screw the lid on tightly.
- 8
Step 8

Turn the jar upside down, wrap it in a towel, and leave it until completely cooled.
- 9
Step 9

Put the finished preserves in a cool place for storage. Winter cucumbers without vinegar are ready.
