
Cucumbers in tomato juice
Description
The drink is quick and easy to prepare. For this recipe, I specifically save a few cans of tomato juice from last year's supply, as this type of tomato juice works perfectly. Some say you can substitute it with diluted tomato paste, but I don't care for that option. It's the tomato juice that gives the cucumbers the necessary tang and vibrant tomato flavor. Prepare all the necessary ingredients. Select cucumbers of approximately the same size and bright green color.

Place the cucumbers together with all the spices into a clean jar.

Separately boil about 1 liter of water, pour it over the cucumbers and let stand for 15 minutes. Then drain the water.

Meanwhile, prepare the marinade. Bring tomato juice to a boil, add salt and sugar, wait until the crystals dissolve, then remove from heat and pour in vinegar. You'll need less vinegar than usual because tomato juice already contains acid. Pour the marinade over the cucumbers. Sterilize the jars with cucumbers in boiling water for 10 minutes. Then seal with metal lids, wrap in a warm towel, and leave until completely cooled. Afterwards, store in a pantry or cellar until winter.
