
Little cucumbers for a one-liter jar
Description
Homemade preserves keep well for a long time. Divide spices, salt, sugar, and cucumbers among jars. Pour in boiling water, let stand, then pour again with the same brine, brought to a boil. Seal the jars. Done! If you are preserving lots of cucumbers, for convenience you can add salt and sugar to the brine rather than into the jar. The preserve is ready for winter storage.

Prepare the ingredients and sterilized jars with lids.

Cut the bell pepper into thin strips, and if the hot pepper is small, leave it whole. You can add a small homegrown “Ogonyok” chili.

Trim the stem ends off the cucumbers.

Place the spices at the bottom of the jar. Bring the water for pickling cucumbers to a boil.

Pour boiling water over the cucumbers. Leave for 15–20 minutes under a tightly closed lid. Pour this brine into a saucepan, bring it to a boil, and pour it back into the jar, adding vinegar. Seal the jars. Turn the jars upside down until they have cooled completely. Then store them in a cellar or pantry.
