
Very Lemon Pie
Description
Delicious baked treat for the whole family. I add lemon zest and lemon juice to this pie, making it very lemony. Use ripe fruits to achieve a truly rich flavor in the finished pie. Serve it warm or cold. The pie will turn out thin—don't expect it to rise in the oven. Decorate the finished pie with powdered sugar.

1. Line a deep rectangular baking dish with foil.

2. In a blender, combine ½ cup sugar, 2 cups flour, 1 teaspoon lemon zest, butter, and salt (to taste) until a coarse crumb forms. Add 2 tablespoons of water to make the mixture more uniform.

3. Transfer the mixture into the prepared baking dish, place the pan in a preheated oven at 175 degrees and bake for 20 minutes.

4. While the dough is baking, prepare the filling by mixing the eggs and 1½ cups of sugar in a small bowl using a fork.

5. Add lemon juice, ½ teaspoon lemon zest, 1/3 cup flour, and salt to taste. Mix with a whisk and set aside.

6. Once the pie turns golden brown, remove it from the oven and reduce the temperature to 150 degrees.

7. Pour the lemon filling onto the pie and place it back in the oven for 30 minutes.
