    Remove the cores from the apples, cut them in half, place in a microwave-safe dish, cover with a lid, and bake in the microwave for about 7 minutes. Baking time may vary depending on the apple variety; adjust as needed. The apples can also be baked in the oven.

    To make sea buckthorn purée, rub it through a sieve. Do not discard the leftover pulp, as it can be used to brew a tasty and healthy tea. For making marshmallows, you will need 40 grams of sea buckthorn purée.

    Puree the baked apples through a sieve, or first blend them with a blender. Measure out 120 grams of apple puree for making marshmallows.

    Beat the egg white until fluffy foam forms, then gradually add 130 grams of sugar and beat until stiff peaks form. Add apple puree to the whipped mixture and beat until light and fluffy.

    Put 250 grams of sugar into a saucepan, add agar-agar, pour in 100 ml of water, place over low heat and bring to a boil, stirring constantly. Boil for 4 minutes after boiling begins.

    Gradually pour the syrup into the whipped egg white mixture while continuing to beat, then add the sea buckthorn puree. Beat until thickened, until the mixer leaves distinct, relief-like traces on the meringue mixture.

    Transfer the whipped marshmallow mixture into a pastry bag. Prepare the area for piping the marshmallows in advance, lining it with parchment paper or a silicone mat. You will need two standard-sized baking trays. Pipe the marshmallow mixture onto the parchment paper and let it stabilize for 6–8 hours, depending on the quality of the agar-agar.
