
Awesome Banana Cake
Description
Before serving, be sure to let the cake sit for several hours, or better yet, leave it overnight in the refrigerator. I've made this dessert many times for various occasions, and it's always been a huge hit! It's delicious, hearty, moist, and nutritious. I highly recommend you try making it. Serve it warm or chilled. Perfect with tea.

1. Separate the egg whites from the yolks, set the yolks aside.

2. Beat the egg whites until a fluffy foam forms, then add a pinch of salt and continue beating. Divide the granulated sugar (150 grams) into two equal parts (half for the whites, and the other half for the yolks). Gradually add the sugar in a thin stream while beating.

3. Set the beaten egg whites aside, mix the yolks with a mixer, then gradually add granulated sugar in portions and mix.

4. Gently fold half of the whipped egg whites into the yolks using a spatula, mixing in one direction.

5. Sift the flour in advance and add it to the egg mixture in portions, leaving a few spoons aside, mixing each time.

6. Transfer the dough to the remaining egg whites, add the flour, and mix. Let the dough rest for a few minutes, then transfer it to a baking pan and place in a preheated oven at 180 degrees. Bake for 30-40 minutes, or until a toothpick inserted comes out clean, depending on your oven's power.

7. Pour a couple of tablespoons of boiled water into a bowl, dilute it with the juice of one lemon, add 40 grams of sugar, mix and warm slightly to dissolve the sugar granules.

8. Peel the bananas and slice them into pieces, cut half of them into small pieces.

9. Divide the condensed milk into two bowls. Into one bowl, add softened butter and mix everything with a fork. Add small pieces of banana to it.

10. On a water bath, mix cocoa, sugar, and milk, add a small piece of butter, and stir well.

11. Remove the finished sponge cake from the oven, let it cool, then cut it into 3 equal layers.

12. Break one cake layer into small pieces by hand, add the pieces to the cream (butter + condensed milk + bananas), then mix and let it sit for 10 minutes.

13. Soak the remaining two cake layers with lemon juice and spread with condensed milk (300 milliliters). Place one cake layer on a serving dish, top with bananas, cover with the second cake layer, and spread it with chocolate glaze. On top of the chocolate, place the biscuit layer that was soaked in cream (reserve a small amount for decoration).

14. Spread the remaining crumbs on top and along the sides, then pour over the chocolate glaze and chill the cake in the refrigerator for several hours, preferably overnight.
