
Nuoc mam (Vietnamese fish sauce)

A delicious addition to everyday and festive dishes. Nuoc mam is a sauce that's easy to prepare and absolutely essential in Vietnamese cuisine. 1. Pour coconut juice or water into a saucepan (coconut juice will add freshness to the sauce), add rice vinegar and sugar, and bring to a boil. Let the juice or water simmer over low heat for 3-5 minutes. Once the sugar has completely dissolved, remove the saucepan from the heat and let the liquid cool down.

2. Remove the seeds from the chili pepper and finely chop it. Finely mince the carrot and garlic as well. Add fish sauce, lime juice (freshly squeezed is best, but store-bought lime juice works too), chili pepper, garlic, and carrot to a saucepan. Nam phrik noom is now ready to use. Note: Leftover sauce can be stored in a plastic container, frozen, and used later as a condiment for other dishes. Don't be afraid to experiment. The ingredients listed above are merely a base for nam phrik noom. You can add more sugar, less lime juice, or vinegar. Create your own unique nam phrik noom.
