
Chickpeas with garlic
Description
The dish is prepared without unnecessary complications. The time I indicated does not include cooking and soaking the chickpeas. This varies individually: if you soak the chickpeas for 5-6 hours, they will cook very quickly, in about 35-40 minutes. If you don't soak them, cook for 1.5-2 hours. Let them cool slightly, then drain the water—the chickpeas are now ready for further use. See my recipe. The finished dish can be served.

1. First, cook the chickpeas. To do this, rinse them under running water, then cover with clean cold water and let soak for 5–6 hours. Drain the water, rinse the chickpeas again, add fresh water, and cook until tender—about 35 minutes. Test them; when ready, remove from heat, let cool slightly, and drain all the liquid.

2. Chop the peeled vegetables: onion, garlic, red pepper. Sauté in vegetable oil until soft.

3. Add the chickpeas and broth to the vegetables, simmer over high heat for 3-4 minutes, until all the broth has evaporated.

4. Remove from heat, add lemon juice, herbs, and ground black pepper. Mix well.
