1. First, dry the nuts in the oven or toast them in a dry skillet. It is important to stir them frequently to prevent burning. Meanwhile, prepare a baking sheet or a large pan, line it with parchment paper, and lightly grease the paper with oil.

2. In a small saucepan or pot, combine sugar, salt, and syrup. Bring to a boil and cook until completely dissolved. If you have a thermometer, that's great—monitor until the temperature reaches 160 degrees.

3. In a deep bowl, start beating the egg whites until they form stiff peaks. In a separate container, warm the honey and then slowly pour it hot in a thin stream into the egg whites.

4. Beat at maximum speed for about a minute, then slowly pour in a thin stream the boiling syrup and continue beating. Gently add the nuts and mix. That's it—the almond nougat is ready. Now transfer the mixture onto parchment paper and smooth it out.

5. Grease another sheet with oil and place it on top. That's it—leave it to set for about 10–14 hours. Once the almond nougat is ready, carefully remove the parchment paper and cut into small portion-sized pieces.
