
Ukrainian-style noodles
Description
The dish is prepared without unnecessary complications. Noodles can be made with pork, beef, or veal. Only when the meat is fully cooked, we add potatoes and noodles. The dough must be rolled out thinly and generously filled with the flavorful stuffing. Earlier, when noodles were cooked in an oven or over fire, they would sometimes pre-fry only the meat, but not the vegetables. Occasionally, potatoes in their skins were placed directly onto the coals, then added whole to the meat and continued cooking. The finished dish can now be served.

Prepare the ingredients.

Cut the veal into pieces and place in a frying pan with heated sunflower oil. Sear over high heat.

When the veal is browned, add the onion and carrot cut into small pieces. Mix and fry for another 5 minutes.

Salt. Add boiling water and cook, covered, over low heat for about an hour.

Prepare the dough. Pour buttermilk or kefir into a bowl and add baking soda. Mix well.

Add salt, flour, and pour in a tablespoon of sunflower oil. Knead the dough.

Knead the dough well and let it rest for 15 minutes.

While the dough is resting, let's prepare the potatoes. Choose large potatoes, slice them and fry in sunflower oil for about 7 minutes until a golden crust forms.

Roll out the prepared dough thinly and brush with sunflower oil.

Chop the dill and sprinkle it over the dough. Add garlic pressed through a garlic press.

Roll up the roll and slice it into pieces.

The potatoes are browned. Transfer them to the meat with vegetables.

Place the noodles on top. The potatoes and meat cook in the sauce, while the noodles steam. Cover with a lid and cook over low heat for about 15 minutes. The noodles should slightly open up and expand.
