Preheat the oven to 200°C. Wrap the bell pepper and carrot separately in foil and bake until tender, about 40 minutes.

As soon as you put the vegetables in the oven, peel the potatoes, rinse them, and place in a pot with salted water. Bring to a boil, cover with a lid, and cook until done.

While the potatoes are boiling, prepare the filling. Mix ground meat, finely chopped onion, breadcrumbs, salt, and spices (ground pepper, dried paprika, coriander). Add cold milk and mix until smooth using dough attachments of a mixer. Divide the mixture into four equal parts.

Form 4 patties from the minced meat and fry them in a dry skillet until golden brown on both sides. To prevent the meat from sticking to the skillet, place a piece of parchment paper underneath.

For the vegetable cream: sauté chopped onion and garlic in vegetable oil until soft, then transfer to a bowl. Add peeled bell pepper and carrot, sun-dried tomatoes, salt, and blend with an immersion blender until smooth.

Mash the boiled potatoes with a potato masher. Bring the milk and nutmeg to a boil, remove from heat and let cool slightly. Add the butter and egg yolks, mix quickly, then pour into the potatoes and stir until smooth. The purée should not be too liquid.
