New Year's Tartlets

Description

The pastry comes together simply and quickly. I’m not much of a fan of red caviar and I hardly ever eat it (there are other foods that taste far better and cost far less), but at New Year red caviar is tradition. Standard red caviar open sandwiches feel too plain to me, so I always dress up the holiday table with New Year’s tartlets topped with red caviar. To me, red caviar tartlets are both delicious and beautiful—a snack that fits right in with the harmony of a New Year’s feast. Wouldn’t you agree?:) Serve warm or chilled. Perfect with tea.

    Actually, we’ll make our tartlets from these ingredients.

    First, hard-boil the eggs and separate the whites from the yolks. Grate the whites on a fine grater or mash them with a fork until paste-like; we don’t need the yolks.

    Grate the processed cheese on a grater, mix with mayonnaise and egg white.

    Take fresh tartlet shells, fill them with a cheese-and-egg mixture, and spoon a little red caviar on top. Your New Year’s appetizer is ready! :)
