
New Year chocolate cupcakes
Description
The recipe won't take much time. This recipe yields 2 dozen cupcakes. The cupcakes resemble Christmas pudding, are made from simple ingredients, and won't take much of your time—especially important on a holiday. Serve chilled.

Step 1

1. Stir cocoa and espresso into boiling water and cool to room temperature. Once cooled, add sour cream and vanilla extract, mix well, and set aside. Preheat oven to 175°C. Grease a muffin tin with oil or line with paper liners. In a medium bowl, mix flour, baking soda, and salt. In a large bowl, use a mixer to beat butter and sugar together. Add eggs, one at a time, beating after each addition. Add 1/3 of the flour mixture and beat at low speed. Add 1/3 of the chocolate mixture and beat again. Repeat with the remaining flour and chocolate mixtures, adding in two more batches. Mix thoroughly.

2. Spoon 2 tablespoons of batter into each muffin cup and bake for 15–18 minutes. Let cool completely before applying the glaze. To make the glaze, in a large bowl mix butter, sugar, 2 tablespoons of milk, and vanilla extract. Add more milk if necessary to reach desired consistency. The glaze should be thinner than regular cake frosting. Drizzle the glaze over the cupcakes.

3. Decorate cupcakes with pieces of marmalade.
