
New Year's Pirozhki
Description
Perfect with tea or coffee. The dough in this recipe turns out delicious—very tender and airy. You can make individual turnovers or one large pie, and not only in snake shape. Use any filling you like; both savory and sweet work—the main thing is that the filling should not be too juicy or runny. The baked goods are not only very tasty; their special charm comes from the little snake shapes. A great choice for welcoming the Year of the Snake and more. Children devour them with such delight—they disappear faster than cake. Be sure to try them and surprise your family or guests. Can be served with tea or coffee.

Prepare all the ingredients for the dough: flour, sugar, salt, vegetable oil, yeast, and warm water. You may need 2 to 2.5 cups of flour.

Combine warm water, sugar, and yeast.

Mix and let stand for 10 minutes.

Add two cups of flour, salt, and vegetable oil.

Mix and continue kneading by hand. If necessary, add up to another 1/2 cup of flour as you go. The finished dough should be soft and slightly sticky.

Gather the dough into a ball, brush with vegetable oil, cover the bowl with a towel, and leave in a warm place for 1–1.5 hours.

Meanwhile, prepare the filling. I use sausage and cheese grated on a coarse grater, but you can make any other filling you like. Meat, fish, vegetable, mushroom, or cottage cheese fillings all work well. You can also make a sweet version, but make sure the filling is not runny.

The finished dough should increase in size by 1.5 to 2 times.

The risen dough needs to be punched down, and then you can start shaping the pirozhki.

You can make the snakes two ways. The first option is to roll the dough into a rectangle and cut it into strips. I used the second method, dividing the dough into equal ball-shaped portions.

Roll out each piece of dough as shown in the photo, so one side is slightly wider than the other, and place the filling in the center. Pinch the edges closed, grease your hands with vegetable oil, and gently stretch the piece with your hands to make it a little longer.

Shape the dough pieces into little snakes and place them on a baking sheet lined with parchment paper. I made snakes rolled into coils, laying out the dough in a spiral, leaving the front part free and shaping the heads by hand. You can give your snakes any other shape you like. Brush the dough with egg yolk, then use black peppercorns or halved raisins to make eyes. Bake in the oven at 190°C until golden brown.

New Year's "Snakes" pastries are ready. Before serving, you can cut little tongues for the snakes from bell pepper.
