
New Year cookies
Description
Homemade baked treats for tea. To make "Cockerels" cookies, you'll definitely need special cockerel-shaped cookie cutters, which can be purchased at any specialty store. Otherwise, the process is just like making regular cookies. We'll decorate them with homemade icing. Let's get started.

Prepare the dough. To do this, mix all the dry ingredients: sugar, flour, and baking soda. Stir and make a small well.

Add 1 egg yolk (reserve the egg white in a clean, dry bowl, as we'll need it for the glaze) and cut the chilled butter into small pieces. By the way, you can also grate the butter on a coarse grater—this will make mixing the dough easier and faster.

Mix everything thoroughly as quickly as possible and with as few movements as possible, so that the butter does not melt and run. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 15–20 minutes.

Then roll out the dough to a thickness of 5 mm and cut out cookies using a rooster-shaped cutter or a knife with a paper stencil. Transfer the cookies onto a baking sheet lined with parchment paper and place in a preheated oven at 180°C for 12–15 minutes. Keep an eye on them from time to time to prevent burning, as ovens may bake differently.

For the glaze, mix the egg white with powdered sugar, add citric acid, first stir with a fork, then beat with a mixer until white.

After that, add 1.5 tablespoons of starch and mix with a spoon. The glaze has become thicker, but not too thick—it's still slightly runny and flows well off the spoon. This is exactly the consistency we need for the glaze.

Divide the icing into 3 bowls. Add pink food coloring to one, blue to the second, and leave the third white. To the white icing, add another ½ tablespoon of starch to make it thicker and more opaque.

Place the icing into piping bags. Make small holes. On the finished cookies, first create a border with white icing and let it dry for 15 minutes, then decorate the cookies as desired.

Leave the finished cookies in a warm place for 2–6 hours to dry the glaze. Make sure your family members don't eat them earlier :)
