Prepare the ingredients.

Add the wheat starter and yeast to water at room temperature. Stir.

Add all remaining ingredients except salt. Knead the dough, let it “rest” for 20 minutes, and after 20 minutes knead in the salt.

After 30 minutes, perform a dough kneading using the “stretch and fold” method.

After the first kneading, let the dough “rest” for another 75 minutes, then do another kneading and place it in the refrigerator for 12–18 hours.

Take out the dough, roll it into a ball on a flour‑dusted table, and let it warm up for 40–60 minutes.

After an hour, transfer the bread onto a baking sheet seam side down.

Make cuts with a sharp knife before baking, preheat the oven to the maximum temperature of 250 °C, bake with steam for the first 10 minutes, then lower the temperature to 220 °C and bake for another 30–35 minutes.
