Pumpkin gnocchi

Description

The dish is prepared without unnecessary complications. Gnocchi can be made not only from pumpkin. They are also made from potatoes, turnips, Jerusalem artichokes, and many other ingredients. Despite their unfamiliar name, gnocchi are simple to prepare. We make the dough, and then follow the same method as for lazy vareniki. The finished dish can be served at the table.

    Let's start by preparing the pumpkin. Wash the vegetable and cut it in half. Use a spoon to scoop out the seeds and pulp. Keep the firm part. Then, peel the skin off the pumpkin.

    Cut the prepared pumpkin into small pieces. Place in a saucepan and add a small amount of water, so the pumpkin simmers rather than boils. Once tender, mash the cooked pumpkin through a sieve until it becomes a smooth puree.

    Pour olive oil into the hot puree. Season with salt and pepper. Grate about 100 grams of cheese, add it to the pumpkin, and mix well. Break a couple of eggs into the cooled puree and stir. Add flour and knead the dough.

    Let the dough rest for about 10 minutes. Then divide it into portions to roll into sausages. The same principle as with lazy vareniki. Cut the sausages into small pieces. Bring a pot of water to a boil. Drop the gnocchi into the boiling water. Stir. When the gnocchi float to the surface, reduce the heat. Cook for another one to two minutes.

    Remove the hot gnocchi with a slotted spoon. Sprinkle them with grated cheese, add butter, and include thyme leaves for a touch of piquancy. Serve the dish hot.
