Step 1

Boil the potatoes in their skins. The potato peel should remain intact. Avoid piercing them during cooking, as the potatoes will start absorbing water, which negatively affects the texture of the gnocchi (small potatoes take 10–15 minutes, medium ones 20–25 minutes, large ones 35–45 minutes; however, it's better to first boil one potato as a test to determine the exact cooking time needed). ...and mash without adding liquid, making sure there are no lumps, then let the puree cool to room temperature.

Mix the dry ingredients (flour and salt). Then add egg yolks and olive oil to the puree, mix well, and add the flour. Gently stir until a dough forms.

Knead the dough with both hands for 1 minute.

Roll out the dough into a rope and cut it into small squares.

Now there are two options: you can leave the gnocchi as regular little pillows, or use a special ridged board (or a fork).

Roll the gnocchi. Place them on a baking sheet so they don't touch each other. Then proceed to cooking. They are very easy to cook (just like dumplings). Bring salted water to a boil and add the gnocchi (12–15 pieces at a time), waiting for them to float to the surface. Watch carefully, as they only need about 2 minutes. Another option is to pan-fry them in a mixture of butter and olive oil.
