
Unsweetened Lenten Cookies
Description
The recipe won't take much time. 1. Peel the pumpkin, remove the fibrous layer and seeds, then cut it into small pieces and boil until soft—about 20 minutes. 2. Meanwhile, peel the carrots and grate finely on a small grater. 3. Mash the cooked pumpkin with a fork into a puree and mix it with the grated carrots. Add oat flakes to the mixture and stir well. Let the flakes soak for about 10 minutes. 4. Add vegetable oil to the mixture and knead the dough. It should not stick to your hands. If it does, chill the dough in the freezer for a while. 5. Shape small cookies and roll them in sesame seeds. 6. Preheat the oven to 180°C (356°F). Line a baking sheet with parchment paper. If you don't have parchment paper, dust the tray with flour. 7. Bake the cookies for about 15 minutes. They will be fully cooked but still soft. As you can see, the dough is vegan and contains no sugar. If you'd like to sweeten the cookies a bit, add chopped dates or apricots. Serve warm or chilled. Perfect with tea.
