
Unsweetened cottage cheese casserole
Description
Delicious baked treat for the whole family. I used a mixture of green onion, fresh parsley, and dill as fresh herbs—about 20 grams in total. I divided the hard cheese into two parts: one part I added into the cottage cheese mixture, and the other I sprinkled on top to create a tasty cheesy crust. If you prefer, you can add all the cheese into the cottage cheese mixture—it will still be very delicious. My cottage cheese was very dry, 5% fat, so I only needed 50 grams of flour—you might need more. Serve with tea or coffee.

Prepare all the necessary ingredients. Rinse the fresh herbs under running water.

Beat the eggs in a spacious bowl, add salt.

Using a mixer, beat the eggs for about 20 seconds until a fluffy foam forms.

Add all the cottage cheese to the beaten eggs.

Use an immersion blender to mix these ingredients until a smooth mixture is obtained.

Add flour. You may need more or less flour depending on the moisture content of the cottage cheese.

My cottage cheese is quite dry, so I only needed 50 grams to achieve a sticky curd mixture with active stirring.

Grate the hard cheese on a coarse grater. Add half of it to the bowl with the cottage cheese mixture.

Add finely chopped fresh herbs.

Mix everything and transfer to a baking dish, smoothing with a spoon. I used a silicone baking dish, so I didn't grease the bottom or sides.

Spread the remaining half of the grated cheese evenly over the surface of the cottage cheese mixture. Bake the casserole in a preheated oven at 180 degrees for about 30-35 minutes.
