
Unusual cake
Description
The baking is simple and quick. To make this unusual cake, we'll need soft cream cheese (you can substitute it with mascarpone), canned pineapple cut into cubes (preferably, though not mandatory, as we'll chop the pineapple even finer anyway), and plenty of nuts. I add walnuts to the batter, while cashews will be used for decoration (you can also use almonds or more walnuts). By the way, by experimenting with food coloring or creams, you can make the cake look even more vibrant.

First, prepare the crusts. For the filling, finely chop the walnuts and pineapple.

Sift the flour, then add baking powder, cinnamon, salt, and sugar.

Beat the eggs with vegetable oil.

Add the beaten eggs to the dry flour mixture. Knead the dough.

Add nuts with chopped pineapple and vanilla to the dough. Pour in the syrup from the pineapple and mix everything well.

The resulting dough makes three layers, each about 22 cm in diameter. Bake them at 180°C for approximately 40-45 minutes. Check for doneness with a toothpick.

While the cake layers are cooling, prepare the cream: beat mascarpone with vanilla extract, powdered sugar, and butter. Add cinnamon if desired.

Assemble the cake, spreading cream between each layer. Reserve some cream for decoration.

Toast the nuts for decoration, adding sugar to them. Decorate the cake with the caramelized nuts.
