1. Prepare the dough: add salt and cold cubed butter to the flour, and blend the mixture with a blender until it reaches a crumbly texture.

2. Add the egg, 5 tablespoons of milk, and knead the dough first in a bowl, then on the table. Wrap the dough in plastic wrap and refrigerate for 40 minutes.

3. Next, prepare the filling. Slice the mushrooms into small pieces and cut the onion into large chunks. Break the eggs and lightly beat them with a mixer. Add salt, nutmeg, thyme, and cream, then mix again using the mixer.

4. Sauté the mushrooms in butter until golden (do not salt and do not cover with a lid). Sauté the onion in butter until slightly browned.

5. Roll out the dough thinly (3-4 mm), place it into a baking dish previously greased with butter. Press the dough into the dish, trimming off the excess, then add the mushrooms and grated cheese.

6. Evenly distribute the onions and pour in the filling (gently tap the pan on the table to help the mixture fill the spaces between the onions and mushrooms). Next, use the remaining dough to form a lid for the pie and carefully seal the edges. Bake in a preheated oven at 200 degrees Celsius for 40 minutes.
