Description
Homemade tea-time baking. A German cake is easy to make and relatively quick. If your hazelnuts are raw, toast them in a hot skillet first and rub off the skins. Cake is always a safe choice, and all the more so when it’s tender, chocolatey, and nutty.

Prepare the ingredients for making the cake.

Place the roasted hazelnuts in the blender jar.

Pulse or finely chop the hazelnuts until you have coarse crumbs with small pieces of nut still visible.

Place the sifted flour and cocoa into the bowl.

Mix these ingredients.

Separate the whites from the yolks. Beat the whites with an electric mixer until soft peaks form. Then gradually add the sugar, beating without stopping.

Add the egg yolks to the egg whites mixed with sugar.

Gently whisk the egg whites with the sugar and the yolks together. Melt the butter, let it cool a little and pour it in as well.

Then pour in the milk and stir again.

Add baking soda neutralized with vinegar or lemon juice to the bowl with the flour and cocoa. Then gradually add the egg whites with sugar, egg yolks, butter, and milk. Knead until the dough is smooth and even.

Add crushed hazelnuts to the batter.

Mix the dough with hazelnuts.

Place the batter into a muffin tin lined with parchment paper.

Bake the cake in an oven preheated to 170–175 degrees for 40–45 minutes. Pierce the cake with a dry wooden skewer, and if it comes out dry, the baked good is ready.

Let the cake cool and remove it from the pan. Melt the chocolate and drizzle it over the cake.
