
German bread
Description
The baking process is simple and quick. This recipe slightly differs from the original, as the goal is to make the healthiest possible bread. That's why it uses whole grain rye flour, malt syrup instead of sugar, and a rye sourdough starter. The finished bread turns out very dense with a slightly moist interior, allowing it to stay fresh for several days without becoming stale. This bread is perfect for sandwiches or toast with butter. Serve it cooled or slightly warm.

1. Prepare the starter: place the starter culture into a bowl, add water and mix thoroughly. Add flour and mix. Cover the bowl with plastic wrap and let it sit at room temperature for 15 hours.

2. Add water to the starter and mix well. Pour the starter into the mixer bowl, then add flour, salt, and maltose syrup.

3. Knead the dough for 1-2 minutes at speed 2, then shape it into a ball by hand (for convenience, wet your hands with cold water). Place the dough onto a floured surface and shape it into a round form.

4. Shape the dough: flatten the dough with your hands into a disc, fold one edge to the center and seal the seam. Fold the other edge to the center and seal the seam. Bring the two edges of the dough together to meet in the middle.

5. Turn the dough seam-side down and roll it up. Place the dough into a pan greased with vegetable oil and dusted with whole grain flour, smooth side down.

6. Level the surface of the dough in the pan and cover with plastic wrap. Let the dough rise at room temperature until it nearly reaches the edges of the pan. Grease the pan lid with vegetable oil and place it on top of the pan.

7. Place a container with 500 ml of water on the bottom of the oven, checking the water level periodically. Preheat the oven to 190 degrees and bake the bread for 1 hour.

8. Then reduce the temperature to 100 degrees and bake the bread for another 4 hours. Turn off the oven and let it cool down with the bread inside.
