
Tender Cake
Description
The recipe won't take much time. I often add fresh coffee grounds to my baked goods. They not only flavor the dough, but also improve its texture. The aroma of coffee-infused baked goods is simply wonderful—it instantly whets the appetite. Serve with tea or coffee.

Separate the eggs into whites and yolks. Beat the whites with a pinch of salt into a stiff foam.

Beat the egg yolks with condensed milk into a fluffy mixture. Gradually adding oil, beat until a smooth cream forms.

Add the flour sifted with baking powder and milk. Using a mixer at low speed, mix until a thick batter forms. Add the coffee grounds and mix.

In two to three batches, add the beaten egg whites to the batter, folding gently from the bottom up and around in a circular motion.

Carefully pour the batter into the pan and bake in a preheated oven at 200 degrees until the batter rises high and begins to crack. Then reduce the heat to 180 degrees and continue baking until a toothpick inserted comes out dry.

Cool the finished cake on a rack.
