
Tender millet pancakes
Description

I knead the yeast dough using a bread machine. For this, I always sift the flour and use all ingredients at room temperature.

Load the ingredients into the bread machine bucket according to the instructions for your model.

After kneading, the dough should rise at least twice its size. The dough turns out very light, elastic, and pliable, but handle it with oiled hands.

Roll out the dough into a 2 cm thick layer. Cut out rounds using a pastry cutter, dipping the cutter's edges into flour.

Place the flatbreads on a parchment-lined baking sheet and prick them with a fork. Lightly dust the flatbreads with flour. Let them rise, then bake in a preheated oven at 200°C until golden brown.

If desired, mix about 50 grams of butter with one tablespoon of sugar and one tablespoon of flour into a smooth paste. As soon as the flatbreads start to set, remove them from the oven and generously brush with the prepared mixture. Then finish baking until done. This step is optional, but flatbreads with this topping turn out very delicious!
