
Neutral glaze
Description
For a neutral glaze, you need NH pectin. Regular lemon or apple pectin is completely unsuitable. It cannot be reheated, which is necessary for reusing the glaze. Such glaze can be stored in the refrigerator for up to six months, so there's no need to make it every time it's needed.

Prepare all the necessary ingredients for making neutral glaze.

Pour water into a saucepan, add 200 grams of sugar. Mix and place over low heat.

Mix the remaining sugar with the pectin.

Heat the water to a temperature of 60 degrees.

While stirring, add the sugar and pectin mixture.

Bring to a boil and dissolve the sugar, then pour in the glaze.

Simmer over low heat for 3-5 minutes.

Pour the neutral glaze into a clean, dry jar, cover with a lid, and store in a cool place. Before use, simply heat the glaze to a temperature of 45–50 degrees.
