
Neapolitan Easter pie with rice
Description
Perfectly pairs with tea and coffee. You can make the same pie with chocolate by adding grated chocolate to the filling and a bit of cocoa to the dough. Can be served with tea or coffee.

1. First, prepare the dough: sift the flour into a large bowl. Place cold butter, cut into cubes, eggs, sugar, and the zest of one lemon in the center. Mix the ingredients very quickly so the butter doesn't melt, until a smooth dough forms.

2. Knead the dough into a ball, let it rest in the refrigerator for about half an hour, covered with a towel or wrapped in plastic wrap.

3. Rinse the rice in cold water and cook until half-done.

4. For the filling, place cooked rice, cottage cheese, orange essence, sugar, eggs, yolks, candied orange peel, and cinnamon into a bowl.

6. Roll out the dough from the refrigerator on a lightly floured work surface using a rolling pin.

7. Place the layer of dough into a greased removable-bottom pan.

8. Spread the dough to form a neat pie base with edges 3-4 cm high.

9. Roll out the remaining dough and cut it into strips.

10. Fill the pastry base with the prepared filling, and decorate with strips of dough.

11. Use the tines of a fork to secure and decorate the edges of the pie.

12. Bake the pie in a preheated oven at 180 degrees for 45–50 minutes. Let the baked pie cool slightly, then dust with powdered sugar.
