
Saffron cod in batter
Description
1. First, wash the fish and remove the innards. Carefully remove all bones, as only fillets are used in this battered navaga recipe. 2. Cut the fillets into even pieces and season with salt to taste. Optionally, add some pepper, fish spices, or dried herbs. 3. Sift flour, starch, and salt into a small bowl. 4. Lightly beat the egg with a fork and pour it into the dry ingredients. 5. Gently mix everything and gradually add very cold water until the batter reaches the desired consistency. 6. Finally, add baking soda (previously extinguished with a bit of vinegar or lemon juice) or baking powder. 7. Pour some flour onto a plate and coat each piece of fish evenly on all sides. 8. Meanwhile, pour vegetable oil into a frying pan and heat it well. 9. Dip each piece of fish into the batter, then place it in the hot oil. To make homemade battered navaga more appetizing, it's best to fry it in plenty of oil. 10. After frying, transfer the fish onto a paper towel to absorb excess oil, then serve immediately.
