
Authentic Tatar beef belyash
Description
Delicious pastries for the whole family. Whenever I visited the Crimean Peninsula, I often passed by kiosks selling Crimean pastries. I have warm memories of Tatar cuisine dishes. They are incredibly tasty. I used to think I could never make them at home, but it turned out I was wrong. A good, reliable recipe plus the desire to create work wonders. Now you know too. Can be served with tea or coffee.

To prepare the dish, take meat (mince), flour, kefir, salt, sugar, egg, butter, onion, potato, and spices.

Sift the flour into a bowl. Grate the frozen butter on a coarse grater. Add a teaspoon of salt and a pinch of sugar. The sugar is added for flavor. Beat the egg and add it to the dough. Pour in the kefir and knead the dough.

Knead the dough well by hand. You will get a firm, smooth dough. Cover the bowl with plastic wrap and let it rest.

For the filling, take ground meat. You can use only beef, or a mix (50/50 pork/beef). Add salt, spices, finely diced onion, and potato to the meat.

Divide the dough into several pieces. I ended up with 9. The dough turns out so non-sticky that it doesn't even adhere to the board. I didn't use any extra flour.

Roll out each piece into a thin pancake.

Place 2 tablespoons of filling in the center of the crepe. Spread it so that the filling does not extend beyond the edges of the crepe.

Gather the edges of the pancake to form a bun-like shape with a hole in the center. Secure the edges well. This shaping method is called "skirt," where the dough edges are gathered like a skirt and tightly sealed. This same technique is used to shape manty.

Form all the belyashi.

Line a baking sheet with parchment paper. Place the prepared belyashi on the sheet. Pour 1 tablespoon of boiled water into each hole. Add 5-10 g of butter into each hole. Brush the belyashi with beaten egg. Preheat the oven to 200°C. Bake the belyashi for about 40 minutes.

Serve the belyashi slightly cooled. Excellent!
