Description
It works for both holidays and everyday meals. It’s important to cook the chickpeas properly, and then be sure to use a blender to puree them into a smooth paste with no lumps. Hummus can be kept in the refrigerator for several days; just be sure to cover it with plastic wrap. Serve with herbs and sauce.

1. Place the chickpeas in a sieve or colander and rinse them under running water.

2. Place the chickpeas in the pressure cooker, rinse with water, add a whole onion and 1 clove of garlic. Set the valve to the «Closed» position and cook on «Boil» mode for 1 hour.

3. After some time, carefully open the lid and drain the chickpeas into a colander, reserving the liquid. Leave the chickpeas and liquid to cool.

4. Place the cooked chickpeas in a blender along with 1/2 cup of the cooking liquid, tahini, olive oil, lemon juice, and 1 clove of garlic. Blend on low speed, then increase the speed until the mixture is smooth.

5. Serve the appetizer immediately, garnished with olive oil and chopped parsley, and add sumac.
