
Authentic cheesecake
Description
Delicious baked treat for the whole family. There are hundreds of cheesecake recipes. The authentic version is made with a shortbread crust and soft cheese; different recipes use regular cottage cheese, mascarpone, or other cheese varieties. This dessert can also be prepared without a shortbread crust, but then it can no longer be considered a true cheesecake. This is an excellent dessert for a holiday table or simply for treating friends and family. Serve cooled or slightly warm.

1. Melt the butter. Crumble the cookies in a blender or by hand into fine crumbs. Combine the butter with the crumbs and mix well. Transfer the shortbread mixture to a baking dish, spreading it evenly over the bottom and sides. To create a smooth, even layer, press the crumbs down firmly using, for example, a glass with a flat bottom.

2. Transfer the cheese to a bowl. Wash the lemon and grate the zest, you need 2 tablespoons. Add sugar and starch to the cheese in the bowl, a pinch of salt, and mix well. Then add the eggs, followed by the additional egg yolks, and mix thoroughly. Pour in the cream and 1 tablespoon of lemon juice.

3. Pour the cheese mixture into a mold, then tap it on the table to release any possible air bubbles, and smooth the top with a spoon. Place the dessert in a preheated oven at 200°C (392°F) for 10 minutes, then reduce the temperature to 100–120°C (212–248°F) and continue baking for 60–80 minutes.
