It's worth it, though, as it's always pleasant to diversify your home cooking, and even more delightful to surprise your loved ones. So, let's get started! 1. Prepare the dough. First, sift the flour and divide it into two parts: mix the first part with kefir, sugar, and yeast; mix the second part with water, vegetable oil, and egg. Let the dough rest for 1 hour. After that, combine both parts and knead thoroughly. Cover the resulting dough and let it rise for another 30 minutes. 2. Prepare the filling. Peel the pumpkin, remove the seeds, wash it, and grate it on a grater. Mash the soft cheese—it should be easy to do—and mix it with the pumpkin. If you'd like to make a savory pie, add finely chopped onion to the mixture. Season with spices and salt to taste. 3. Assemble the pie. Roll the dough out thinly into a circle and place the prepared filling in the center. Fold the edges over the filling, sealing them into a sort of "knot" on top of the filling. Flip the pie over and gently press it down to achieve the desired diameter, allowing the filling to spread evenly. Place the pie onto a greased and floured skillet. To prevent steam from bursting the pie during baking, make a small cut on top. Let the pie rest in the pan for about 30 minutes, then transfer it to a preheated oven at 180°C (356°F) and bake for 30–40 minutes. 4. Once baked, brush the finished pie with tail fat (kurdyuchny fat) or butter. The classic nasdjina recipe is now complete—time to enjoy its delicious taste with your family and loved ones.
