
Napoleon
Description
Delicious baking for the whole family. A cake made at home will be much tastier than one bought in a store, and that applies in particular to the “Napoleon” cake. The store-bought version is always under-soaked, not moist, with little cream and a lot of unsweet, crisp base. Homemade baking, on the other hand, is made with love. Serve cooled or slightly warm.

Prepare the ingredients listed. You may use milk of any fat content.

Sift the wheat flour into a deep bowl, reserving a little flour for rolling out the layers. Cut in butter or margarine (not spread), reserving 80 grams of butter for the cream. Chop the butter into the flour with a knife.

Then cut the butter into the flour with a fork and add a little ice water.

Form the dough into a ball, gathering up the crumbs.

Divide the dough into small balls and place them on a board; put the board in the freezer for 15–20 minutes.

Meanwhile, prepare the cream. Put sugar, salt, and citric acid into a cauldron or a non-stick saucepan, and add two egg yolks.

Pour in milk of any fat content and any type, and whisk everything until the yolks have dissolved in the milk. Add the flour and gently fold it into the mixture, but do not beat.

Place the container on the stove and cook the cream until it thickens, 10–15 minutes, stirring it from time to time.

Add butter to the cream and mix. Cover with plastic wrap and refrigerate to cool.

Remove the dough from the freezer and roll out each ball thinly.

Bake them in the oven at 200 degrees for 3–4 minutes, pricking with a fork so they don’t puff up too much. Place on a plate and let cool.

Spread the sponge layers with cooled pastry cream, setting two layers aside for the crumbs. Place the cake in the refrigerator to soak for 3–4 hours, or even better, overnight.

Crumble two cake layers and sprinkle the cake with the crumbs on top and on the sides; serve.
