
Nalistniki with liver
Description
The pastry is prepared simply and quickly. Aromatic and hearty liver crepes can be served for breakfast, lunch, or dinner. Especially delicious with sour cream or garlic sauce, thick plain yogurt. The crepes can be taken with you on a trip, to work, to the outdoors. Remember that the liver should be soaked before cooking to remove its bitterness. Serve cooled or slightly warm.

Step 1

Prepare the listed ingredients. Obtain pork or beef liver, and soak part of it in water or milk for about 30 minutes in advance. Peel the onion and rinse it.

Rinse the liver in water, cut it into pieces and pass it through a meat grinder, setting a fine-grid plate on the machine.

Crack the chicken eggs into a deep container, add 2 pinches of salt, and pour in milk of any fat content. If milk is not available, replace it with water.

Add the wheat flour and gently fold it into the egg mixture, so that no lumps form. Pour in 2 tbsp of vegetable oil and stir. Let the dough rest for 15–20 minutes to activate the gluten.

Peel the onion, dice it finely, and sauté it in the remaining vegetable oil in a pan until golden, about 2 minutes.

Add the minced liver and stir. Fry for about 8-10 minutes, stirring occasionally.

Turn off the heat and let the ready liver filling cool slightly.

Heat the skillet and fry the crepes, pouring the batter onto it in portions.

Place the cooked pancakes on a plate. Spread 1–1.5 tbsp of filling on the top pancake, up to the edge.

Roll the pancake into a log or fold it into quarters.

Do the same with the remaining pancakes. Place them on a plate and serve them warm.
